AUTUMN DINNER ~ ROASTED SAGE SPAGHETTI SQUASH With GUYERE, SAUTÉED FRESH GARLIC, PARSLEY and TOASTED PINE NUTS

Lenz November Sunset (Hubbard Lake, MI) ROASTED SAGE SPAGHETTI SQUASH With GUYERE, SAUTÉED FRESH GARLIC, PARSLEY and TOASTED PINE NUTS ~ Delightful autumn dinner slightly adapted from pinch of yum . 1 halved and seeded spaghetti squash Extra-virgin olive oil coarse salt & freshly ground black pepper to taste 2-3 minced cloves garlic 2 tsp. white balsamic vinegar 1 cup minced fresh parsley 2 Tbsp. chopped fresh sage or 2 tsp. dried 1 cup grated Gruyere cheese 1/2 - 3/4 cup toasted pine nuts Preheat oven to 375º. Rub squash with olive oil and sprinkle with coarse salt and freshly ground pepper. Place cut side down on sprayed rimmed baking sheet and roast for 25-30 minutes or until fork tender. We have so enjoyed this 'stroll' through your garden, enlarging each image along the way, where the overall harmony achieved through carefully co-ordinated colours, contrast of texture and form become so very apparent. Your garden is lovely. I too have many hosta which I love. How to you control the ferns? Several years ago they started to take over. I was able get rid of them, but this spring I have some coming back. While I do like them I don't want them to take over.

Thank you, dear Ann. My almost 40 yr old garden is certainly a challenge and why I must spend endless hours tweaking, honing plants back home, digging, dividing, and sharing ... and yes ferns (I have many well-behaved varieties) but Ostrich can be a huge issue. I love them but can be like weeds so be careful where you plant them ... I have shared 100+ with friends/family this past spring!
Thank you, dear Eileen. Yes, this 75 year old house and awesome piece of land holds my heart as does the beauty of our land (sunsets) and bones of 100 year old cottage and awesome setting UP NORTH. I have told my children to buy 'the land' ... structures can always be changed ... the land that holds the heart is priceless!

I love your comment of the "land holds the heart...". I've never heard it said so beautifully. I too am blessed with three beautiful pieces of land at home in New Baltimore and in Fairview, MI. I love to walk these wonderful place and thank God everyday for them.
