Hubbard Lake Sunset
FROZEN GRAND MARNIER SOUFFLE
~ Delightful 'remains of the day' summer dessert slightly adapted from The Lark (Savor Michigan Cookbook)

2 1/2 cups sugar
1 cup water
18 organic egg yolks
2 quarts whipped cream (from 1 1/2 cups heavy cream)
1/2 cup Grand Marnier
cocoa powder
Framboise Sauce
- Mix sugar and water in a saucepot and bring to a boil. Cook until mixture reaches 250º on a pastry/candy thermometer. While sugar is boiling, whip egg yolks until light and fluffy. Slowly add sugar mixture while whipping on low. Continue whipping til cool, approximately 10 minutes.
- Fold into whipped cream. Add Grand Marnier.
- Gently pour or pipe filling with pastry bag into soufflé pan (like springform) or individual flan pans lightly dusted with cocoa powder Freeze.
- Remove from pan and serve with Framboise Sauce.
Wine Suggestion: Kir Royale (Champagne and Framboise)
Framboise Sauce:
4 cups fresh organic raspberries
1 cup sugar
Mix together in a bowl and crush berries. Let stand for 5 minutes. Strain and serve.

Ah, dear Monica, you are a hoot! As you can see, though now home, my head is still at the lake. After catching up here (about to hit the garden), will return on Thurs/Fri ... hopefully at some point this summer, my head will catch up with my body! ((August hugs))

You are a dear, Clare ... wish I could share this with you! It's fun to capture each month's setting sun while sipping and shooting. Mr. Ho-Hum wipes the rim although a clean glass is best with a sipping one beside :) Though they may look the same, each month is different as the sun dances across the sky. It's a tough challenge but someone's got to do it ... and that would be me :)

Thank you, dear Eileen. Hubbard Lake is indeed magical. This cold soufflé doesn't flop like hot ones from the oven. When autumn nears, I will make/post my Mushroom Soufflé with White Cheddar Sauce that I haven't made in ages.

Now, dearest Joey, there are so many problems for me with this delicious receipt which you give here today. First, I have no freezer. Secondly, just the word 'souffle' and I know that I am way out of my depth. Thirdly, my kitchen equipment that I have knowledge of does not,I believe, include pastry bags or thermometers.
What I do have is Grand Marnier which I have poured into a glass and drunk in a toast to your most wonderful pictures of the lake. Here's to you and the remains of the day!!
