Tiger Swallowtail Butterfly (Papilio glaucas)
Coneflower (Echinacea)

FROZEN RASPBERRY MOUSSE
~ Fast becoming a favorite simple summer dessert (Bon Appetit -July 2008)

3 cups fresh raspberries, divided (about 16 oz.)
1 1/2 cups powdered sugar
1 Tbsp. kirsch (clear cherry brandy)
1 1/2 cups chilled heavy whipping cram
1/2 cup sour cream
6 mint springs (garnish)
- Puree 2 1/2 cups raspberries, powdered sugar, and kirsch in blender until smooth. Transfer to large bowl.
- Beat Cream in large bowl until firm peaks form. Add sour cream and beat just to blend.
- Fold whipped cream mixture into raspberry puree just until incorporated.
- Divide mousse among 6 (6-oz) parfait glasses. Cover each with plastic wrap and freeze. About 2 hours before serving, place mousse in refrigerator to thaw slightly. Uncover mousse and top with remaining 1/2 cup raspberries. Garnish with mint sprigs.((6 servings)
Note: Easy to double recipe and place in glass serving dish. Finish the same by removing 2 hours early and placing in refrigerator to slightly thaw. Spoon into dessert dishes, top with berries and mint.

Looks like you had such fun with the butterfly. The are delightful creatures and you can't help being enthralled by them. I have seen only a few this year, but have taken many pictures of them.

Summer has been 'crazy' wonderful ... home for 3 or 4 days then back to lake for the weekends (13 guests last weekend ... lots lake fun, cookin' & campfires with all my chickens, grandchickens, and friends of chickens ... making beautiful Hubbard Lake memories).

Hi Gail! The garden welcomes butterflies that seem to be very shy this year ... but bees & hummingbirds seem to be vactioning here. A bite of mousse is a fine way to end the day :) Get well wishes!
I do so love coneflowers also, Rose. Butterflies seem to be few and far between in many gardens this summer. Wonder why? Now bees & hummingbirds are plentiful ...
The Tiger Swallowtails are such a delight as well. And while I've never actually seen the latter in my garden, I have always loved and admired them, through the eyes of talented people like you.
I loved them so much, I've even tried recreating them in sugar (There's a picture of the flutterby somewhere on my old website).
Well, I know I've said it before, but I'll say it again, your eye for beauty is both, breathtaking and inspiring.
