STRAWBERRY CREAM CAKE
~ Quick and easy, equally as good with raspberries

1 pound cake (good frozen is fine)
1 pint or more hulled strawberries
1/2 cup sugar
1 8 oz. package softened cream cheese
1 3/4 cup non-dairy whipped topping
  • Cut cake horizontally into 3 layers.
  • Crush 1 1/2 cup of berries, reserving remaining berries for garnish.
  • Add sugar to topping cream cheese, beating until smooth. Fold in topping then crushed berries.
  • Fill and frost cake with cream cheese mixture. Garnish with berries and chill.

I am enjoying learning the names of all these full moons--strawberry moon is perfect for June! The strawberry cream cake sounds like a delicious alternative to strawberry shortcake, my favorite June dessert.

Hi Rose ... Since 'Under the Strawberry Moon' is the title for one of my still 'unfinished' novels, prepared for capturing a stunning new shot of my favorite moon, this is last year's photo ... last night's evening at the lake was overcast and rainy :( Nevertheless, my heart lies within this photo (perhaps the cover of my finished book) and appreciate your kind words.

Joey, absolutely stunning photo! You are so good with the special effects. I can barely crop. :) I've eaten this cake and it is heavenly. We took 5 granddaughters strawberry picking on Sat. and they had a ball. First time for all of them. Am going to include a couple of photos in my next post-when I can find time to get it done.

Books?? You write novels?? I am very impressed and can't wait to read them.
It sound just delicious I wish you had a photo of it. My strawberries are in bloom here but no fruit yet so I have to wait for this cake.

Yum, Beckie ... love the memorable taste of freshly picked strawberries and how fun to pick them with the grandchildren. Yes, plugging away on 2 ... Diary of a Ho-Hum Housewife is in final editing stage ... Under the Strawberry Moon is 1/3 written.

So sorry to hear that you've been ill, Tyra. Please get well soon ... the garden is anxiously waiting your return!

The Mackinac Island never disappoints, Bren. You must go ... it's a National Treasure and close for you to enjoy. Your kids would so enjoy the bike ride around the island and the fun shots. The Lilac festival is an especially lovely time to visit...

Hulled strawberries are berries without the stems, Anna. Sorry I missed this post :( I just might make this again when the grandboys arrive this weekend. Hope all is well. Hard to believe another full moon is here ...
