In February
it will be

and soup for me!

Happy once

_____________

CHICKEN SOUP WITH RICE
(serves 4 so double for hearty eaters)

2 cups uncooked brown rice or Lundberg Country Wild

1 Tbsp. extra-virgin olive oil

1 large chopped onion

3 minced garlic cloves

8 oz. fresh stemmed shitake or baby bella mushrooms

8 cups organic chicken stock

1 Tbsp. fresh chopped rosemary (1 tsp. dried)

1 (15-oz.) can drained and rinsed chickpeas or cannellini beans

1 (15-ounce) bag baby spinach leaves

2-3 cups shredded cooked chicken

coarse salt and freshly ground pepper

1/2 cup freshly ground Parmesan cheese

  • Cook rice in 4 cups of chicken broth or water about 30 minutes. Set aside.
  • In heavy stockpot, saute onion in olive oil until tender. Add garlic and mushrooms and saute until tender, about 5 minutes. Add remaining broth and rosemary. Bring to boil and remove from heat.
  • Add cooked rice (all or reserve some), chickpeas, cooked chicken and spinach. Carefully return to boil. Watch for spinach to wilt and add season with coarse salt and cracked pepper.
  • Ladle into bowls and garnish with freshly grated Parmesan cheese. (Reheat gently as needed to keep spinach green)

Hi Joey, another great soup for one of our cold February days.
We have had a glorious winter day today with a lot of sunshine, although freezing cold.

oh my, does that sound good!
I hope the latest snowstorm didn't dump too much more snow on your little corner, Joey.
We've just had 3 days of snow and cold winds.
Chicken soup will warm us up!
And we have bright sunshine to cheer us today :)
Have a lovely weekend.

That's a different recipe and not the usual chicken, rice, and onions. I really like the snowman saying.

Hugs Tyra ~ winter prevails ... no sun but tons of blustery snow. Indeed, a creative day for writing and making nourishing soup!

Hi Kerri and thanks for the wishes. Weekend plans to go the lake were scrapped because of the heavy snow (and it's still coming down) ... perhaps next weekend ;) Do hope yours was lovely!

Do hope you get a chance to make a 'mini' snowman, Gail. If you wish, I'll send you some of ours and you can make a 'maxi' snowman!

Happy Birthday week, dear Brenda!

Indeed it's a cold blustery winter day, Cameron ... perfect for a bowl of steaming soup :)

Thanks Linda ~ feel free to substitute matzo balls for the rice! Did you get pounded by the clipper also?

Do hope you like it flowrgirl1! (You're missing a true Michigan February winter :)

Both healthy and yummy, hope your husband enjoys it, dear Beckie. Did you get a piece of this Alberta Clipper blast of snow?

Maurice Sendak's little Nutshell Library (including Chicken Soup with Rice) was one of my children's (now grandboys) favorite set of books, Anna. With or without the chicken, this soup remains a favorite:)
