Lenz November Sunset (Hubbard Lake, MI) ROASTED SAGE SPAGHETTI SQUASH With GUYERE, SAUTÉED FRESH GARLIC, PARSLEY and TOASTED PINE NUTS ~ Delightful autumn dinner slightly adapted from pinch of yum . 1 halved and seeded spaghetti squash Extra-virgin olive oil coarse salt & freshly ground black pepper to taste 2-3 minced cloves garlic 2 tsp. white balsamic vinegar 1 cup minced fresh parsley 2 Tbsp. chopped fresh sage or 2 tsp. dried 1 cup grated Gruyere cheese 1/2 - 3/4 cup toasted pine nuts Preheat oven to 375º. Rub squash with olive oil and sprinkle with coarse salt and freshly ground pepper. Place cut side down on sprayed rimmed baking sheet and roast for 25-30 minutes or until fork tender. Don't know when you are headed up to Michigan wine country...but I loved a new winery I went to this summer. It's on the Leelanau Pennisula and it's called 45 North. Give it a try if you can.

Hi Lindalou ~ We are already up north, leaving from our cottage on Mon and, yes, impressed with 45 North, also 2 Lads Winery (featured on ABC Nightly News). Love wine ... love the scenery ... love the food ... this is a yearly trek!

Hi Marnie ... so true! Traveling through upper Michigan during peak viewing, usually stunning, autumn is weak ... green and brown, wondering where is the red & gold! Perhaps the wet summer/early fall is part of the reason ... usually a rich harvest at this time of year, grapes are hanging on the vine, weeks behind for harvest. Regardless, the area is beautiful. Curious how autumn touches us when we return down state. Do you suppose we will be raking leaves in December?
